I love lasagna, and I love it fixed all different ways. These lasagna roll-ups are a meatless take on a traditional lasagna; whole wheat lasagna noodles packed with low-fat ricotta cheese and spinach…hearty, healthy, and tasty!

Recipe Ingredients

Yesterday, Mister Spice and I were out of school (work) due to snow. Snow days are lovely, but it kind of threw off my plans to have leftovers for dinner. Why, you ask? Well, it just seemed like with a whole snow day ahead of me, I could come up with something better than the leftovers we had been working on since Monday.

I have never made creamed spinach before, and was honestly a little hesitant to try it for some reason. However, I really wanted some creamed spinach to go with the Parmesan Pork Chops I was making (recipe coming soon!), so I decided to try some!
The best thing about this was that the leftovers made a great dip to eat with tortilla chips!

My mom requested that I make some sort of dip for her birthday cookout, perhaps spinach and artichoke dip. I’ve never made any before, so I thought this would be a good time to give it a shot. I wanted something fairly quick and simple, because I wouldn’t have a whole lot of time to make it. After reviewing and searching for several recipes, I finally found one that had a lot of great reviews and seemed simple enough.

Here’s the deal: Herb loves sun-dried tomatoes almost as much as he loves peanut butter. That’s really saying something! So we keep sun-dried tomatoes in our house at all times. We eat them on salads, in pasta dishes, and he’ll even eat them plain straight out of the bag!
