This is a recipe that Herb and I use often. We love it because twice baked potatoes are so versatile – they are great made with a variety of ingredients from veggies to meats to cheeses. It’s easy to mix it up! Though broccoli cheese is usually what we use in our twice baked potatoes, we’ve also added red peppers, mushrooms, different cheeses (Parmesan is great), and even ground beef.

It has quickly become a family favorite of ours, and whenever we share it with friends, it always gets great reviews! So when some of our friends had a cookout recently, we knew exactly what side dish to bring.  When I told everyone that I was bringing cheesy tater tot casserole, our host replied, “You had me at tater!” The best part is that this recipe is quick and easy and only has five ingredients in it!

 

Rosemary Roasted Potatoes

One of our family’s favorite side dishes is roasted potatoes. We chop our taters into bite-sized pieces, roll them around in olive oil and rosemary goodness, and then bake them until they’re nicely browned and crisp on the outside. Yum! You can have your french fries, America – I’ll take these much healthier and tastier spuds!
