Creamy Italian Chicken Noodle Soup


I love The Pioneer Woman, and I’ve experimented with several of her recipes over the years. This recipe for creamy Italian chicken noodle soup, however, is one of my absolute favorites. For this soup, I use my 5 quart enamel-coated cast iron dutch oven, but any large pot’ll do. I’ve made a few changes in this recipe, and it is just simply a big bowl of yum!

Well, Thanksgiving is upon us, and that means LOTS of yummy, seasonal, and rather unhealthy food galore!  Because I knew I would be spending lots of time and money this week preparing different holiday meals for various events, my wallet (and my belly!) needed to take it easy last week.  Therefore, on Monday, I made this healthy baked pasta which will feed my husband and me through Wednesday.  With tomatoes, whole wheat pasta, and lean ground beef, this dish is not only healthy, but hearty and flavorful.

Here’s the deal: Herb loves sun-dried tomatoes almost as much as he loves peanut butter. That’s really saying something! So we keep sun-dried tomatoes in our house at all times. We eat them on salads, in pasta dishes, and he’ll even eat them plain straight out of the bag!

Summer Pasta


Even though Fall doesn’t officially begin until September 22nd this year, in my eyes, Fall always begins on September 1st. This is when I think it’s socially acceptable to start decorating in those wonderful Autumn colors and eating all things pumpkin! So if this is true, then August 31st is sort of the last day of summer.
