Herb here. As you may know, Mrs. Herb and I both really like Mexican food.  I personally cannot EVER get enough guacamole! It is seriously my favorite food. Anyway, in search of another Mexican dish to make, we came across this burrito recipe and loved how adaptable it is and also very easy to make.

Hi, my name is Sister Spice, and I am a picky eater. If you’re not new to this blog, then you probably already know that. I say this because when I eat at Mexican restaurants, I often feel like fajitas are my only option because I can decide for myself what to put (or, more importantly, not put) in my tortilla. That’s one reason I love places like Qdoba, Chipotle, Moe’s, etc., because I can make my own burrito, quesadilla, or whatever else. SOOOOO…Mister Spice and I decided to make our own steak fajitas.

One of my favorite items we got as a wedding present was our griddler.  It makes pancakes and is also great for eggs and bacon.   You can also flip the plates over and use the grill to cook chicken or use it as a panini press.  Since I was born in the 80’s I also like things that transform.

I love different versions of enchiladas.  Throw some good stuff into a tortilla, smother it in sauce and cheese, and voila! Lots of deliciousness ensues.  Now, Mister Spice and I usually have some kind of poultry or beef for dinner every night, so I am constantly looking for yummy, hearty, meatless recipes that Mister Spice will enjoy.  This is one of those recipes!

I hadn’t even heard of “stuffed peppers” until a few years ago. This was definitely not a recipe that my family ever ate while I was growing up, the main reason probably being Sister Spice’s pickyness! (And I will admit, I was a little bit picky as a child as well!)

Best Guacamole Ever

Something you should know about Herb: He’s a guacamole fanatic. Seriously. Guacamole is probably his favorite food (besides cheesecake!) I liked guacamole before I met Herb, and now I’ve developed a great fondness toward it as well. It helps that we can make it fresh ourselves (which we do, OFTEN!) and serve it with our Mexican themed dinners or as a snack.
