As you have probably noticed from our blog, the Herb family is very fond of Italian food. I think I could eat Italian food all day, every day! That’s exactly what I had the opportunity to do back in 2007 with Sister Spice and a small group from our college. It was our first international trip and actually my first time ever on an airplane. We had an amazing 3-week trip, visiting Tuscany and the Amalfi Coast. It was wonderful! The food was absolutely fabulous. I’m pretty sure I gained 5 pounds in those 3 weeks!

If you’re familiar with our blog, you can probably tell that we like our spaghetti around here.  In fact, I believe Mrs. Herb is working on a Spaghetti Recipe Comparison post, so I won’t point out all of our other spaghetti posts.  I will say, though, that I’ve only posted one baked spaghetti recipe, Creamy Baked Spaghetti, and this recipe is pretty similar.  However, this one leaves out the cream cheese and is much meatier and, in my opinion, more flavorful.

Quick Tortilla Pizza

In the mood for pizza? Well I don’t know about you, but I’m usually in the mood for pizza. At the very least, it doesn’t take very much convincing for me to GET into the mood for pizza! Sometimes Herb and I are craving pizza, but don’t want to order one in OR spend the time making crust from scratch. Fun quick solution: Tortilla Pizzas to the rescue!

Chicken Marsala, how we love thee. This is our third attempt at this wonderful dish. I must say, we’re getting pretty good at this! I suppose it never hurts being able to whip up one of your family’s favorite recipes in a jiffy, eh?

Herb’s Bruschetta

One Saturday recently I took my Nana to the local farmer’s market to get some fresh veggies. Tomatoes were in abundance, so I purchased a few, not entirely sure what I would use them for. Then the idea of a simple bruschetta recipe came to me – putting the tomatoes with some of our fresh garden basil and cheese on toast! Sounds like a great lunch to me!

This is our second attempt at chicken Marsala (thus the extremely innovative title of chicken Marsala II!) This delicious version of the dish is adapted from Giada’s Chicken with Mustard Mascarpone Marsala Sauce. What a mouthful (pun intended!)

Mmm, chicken Marsala! One of our family’s favorite dishes to order at almost any good Italian restaurant. There’s just something about the combination of fresh mushrooms, garlic, and rich Marsala wine that just tickles the taste buds just right!
