When Mister Spice and I got back from vacation a few weeks ago, we still didn’t feel like we’d had enough fish and seafood.  So, I made the most wonderful Honey Lime Tilapia known to man…but we still wanted to experiment some more.

Ok.  I have to preface this post by saying that most of the time when I fix fish, I don’t even eat it; I give it to Mister Spice but can’t even touch it myself.  This is because I cannot STAND it if it is “fishy” in the least, and it also has to be crispy for me to enjoy it.

I used to be intimidated by salmon. Or at least cooking salmon myself. I’m not sure why. Perhaps it was just fish in general that I was afraid of. We didn’t eat much fish in our house growing up.

My husband’s family is full of wonderful cooks, and one such cook is his Aunt Shari, whose Cajun roots are conveyed in her unique dishes. One dish she made for Mister Spice and me one summer was blackened tilapia; I am pretty picky (surprise, surprise) when it comes to fish, but I loved this recipe! The recipe is originally by Pat O’Carroll of Pat O’Carroll’s in Lake Charles, Louisiana. Aunt Shari sent me home with the recipe and instructions, and I decided to try it out on catfish this time!
