Yesterday, Mister Spice and I were out of school (work) due to snow. Snow days are lovely, but it kind of threw off my plans to have leftovers for dinner. Why, you ask? Well, it just seemed like with a whole snow day ahead of me, I could come up with something better than the leftovers we had been working on since Monday.

Today, we’re sharing a great recipe with chicken and mushrooms. Are you a mushroom fan? Herb and I are! To be honest, I didn’t think I liked mushrooms til about 3 years ago. I’ve made several versions of this simple chicken dish, but this recipe came from my awesome sister-in-law, Jennifer.  With just a handful of ingredients and a fairly short cooking time, this recipe is so simple to make on a busy weeknight.  Serve it up with some green beans or steamed broccoli and a sweet potato and you have a hearty, nutritious meal!  This recipe makes 8 roll-ups, which was more than enough for my husband and me, but you could certainly double the recipe and make 16.

I love The Pioneer Woman, and I’ve experimented with several of her recipes over the years. This recipe for creamy Italian chicken noodle soup, however, is one of my absolute favorites. For this soup, I use my 5 quart enamel-coated cast iron dutch oven, but any large pot’ll do. I’ve made a few changes in this recipe, and it is just simply a big bowl of yum!

One of my favorite items we got as a wedding present was our griddler.  It makes pancakes and is also great for eggs and bacon.   You can also flip the plates over and use the grill to cook chicken or use it as a panini press.  Since I was born in the 80’s I also like things that transform.
