Saturday – Tax Day Edition!

Mrs. Herb here, and I AM EXCITED! Why, you ask?! Because this is the last Saturday of tax season! You see, when I’m not cooking, baking, and spending time with my wonderful husband and two kitties, I’m working my day job as a tax accountant. So of course, tax season ends this Monday, April 15th, and my life will reach a more slowed, summery pace. And THAT’S why I’m excited!

You know what else that means?! More time to spend outside, walking, hiking, playing tennis, and MORE TIME TO BAKE YUMMY TREATS! Such as this delicious looking salted caramel pecan fudge from my friend Lindsay over at Vegan Yumminess! Lindsay amazingly converts regular recipes to delicious Vegan dishes and treats. Pretty cool stuff! I want some fudge!

I’m also excited because today, Herb and I will be going on our first hike of the spring season! He is taking me where he proposed March a year ago, to Moses Cone Memorial Park near Blowing Rock. We hiked this awesome trail 2.5 miles up to Flat Top Tower, where you can see for miles and miles around! The Tower was slightly scary and made my knees weak – and I’m not normally afraid of heights! It’s just that it was windy and there’s not much railing keeping you from falling several stories down to the ground! Anyway, we had the whole tower to ourselves, and he proposed right there!

We are excited to go and hike the trail again today and revisit Flat Top Tower. The weather is supposed to be great!

Thanks for letting me share this with you – it was one of the happiest days of my life!

  1. Aw! Thanks for the shout out! What a beautiful hike. Jonathan also proposed on a hike above a water fall. Across the valley he hung up a big 40 ft banner that read “Lindsay, will you marry me?” I was blown away. 🙂
