Rosemary Roasted Potatoes

One of our family’s favorite side dishes is roasted potatoes. We chop our taters into bite-sized pieces, roll them around in olive oil and rosemary goodness, and then bake them until they’re nicely browned and crisp on the outside. Yum! You can have your french fries, America – I’ll take these much healthier and tastier spuds!

Rosemary Roasted Potatoes

Recipe Ingredients:

  • Baking potatoes
  • Olive oil
  • Salt
  • Rosemary (fresh or dried)

Since this meal was just for me and Herb, we only used two potatoes. The ratio is for every one potato, there is 1 tablespoon of olive oil, 1/2 teaspoon salt, and 1 teaspoon rosemary. So for this meal, we used 2 baking potatoes, 2 tablespoons olive oil, 1 teaspoon of salt, and  2 teaspoons dried rosemary.

Recipe Directions:

Preheat your oven to 400 degrees. In a large bowl, combine your olive oil, salt, and rosemary. Chop your potatoes into approximately one inch cubes. We leave the peel on, but you could peel your potatoes if you wish.

Stir your potatoes into the olive oil mixture, taking two large spoons to toss and coat the potatoes well.

Spread the potatoes out on a baking sheet and place in the oven.

Bake for 15 minutes. Then take the pan out and mix the potatoes around. Then bake for an additional 15-20 minutes, until potatoes start to brown at the edges.

Enjoy as a wonderful accompaniment to any meal! You may want to add additional salt and pepper to taste. We eat ours with hamburgers and various types of chicken dishes.
