In the mood for pizza? Well I don’t know about you, but I’m usually in the mood for pizza. At the very least, it doesn’t take very much convincing for me to GET into the mood for pizza! Sometimes Herb and I are craving pizza, but don’t want to order one in OR spend the time making crust from scratch. Fun quick solution: Tortilla Pizzas to the rescue!

We usually have tortillas in the kitchen anyway due to our love of Mexican food. This is a quick and easy way to make yourself a pizza, using whatever toppings you choose, of course!

Quick Tortilla Pizzas

Recipe Ingredients:

  • Tortillas
  • Olive Oil
  • Tomato sauce (pizza sauce, marinara sauce, spaghetti sauce, etc)
  • Toppings of your choice! We used several kinds of cheese: pepperjack, Italian blend, etc. as well as some veggies. If you use meat, make sure it’s cooked first!
  • Herbs and spices of your choice! We used a bit of garlic powder and oregano

Recipe Directions:

Place your tortilla(s) on a baking sheet. Broil in the oven on high for about 2 minutes. Then take the baking sheet out. Lightly brush a little bit of olive oil on the tortillas.

Prepare your ingredients, chopping and slicing things as needed. We used sliced tomatoes and chopped green peppers.

Top your tortillas with sauce, herbs, cheese, and any other ingredients you desire.

Broil on high in the oven for 5-10 minutes until the tortillas start to brown and crisp on the ends. Slice and serve your tortilla pizzas and enjoy!
