Parmesan Baked Chicken with Mushrooms

Today, we’re sharing a great recipe with chicken and mushrooms. Are you a mushroom fan? Herb and I are! To be honest, I didn’t think I liked mushrooms til about 3 years ago. My best friend Stephenie finally convinced me to try some when we were eating Japanese one night, and I’ve been hooked ever since. Yum! (Thanks Steph!)

A couple of people in my family, including Sister Spice, are not very fond of mushrooms. In fact, you will probably never see her post a recipe with mushrooms! But that’s okay, because Herb and I love mushrooms enough to give you plenty of recipes with them (see our Chicken Marsala Recipes or Herb’s Pork Chops with Mushroom Gravy! )

If you don’t like mushrooms, then shame on you! Okay, kidding, kidding. But seriously, if you’re not a fan of mushrooms or if you have any picky eaters in your family, this is still a great recipe because it’s easy to avoid the mushrooms with this dish: just serve the chicken tenders from the top. The Parmesan chicken can still be enjoyed by everyone in your family!

Parmesan Baked Chicken with Mushrooms

Recipe Ingredients

  • 4 boneless, skinless chicken breasts, halved
  • 1 egg
  • 1 cup bread crumbs
  • 4 teaspoons garlic powder, divided
  • 2 cups sliced fresh mushrooms
  • 6 Tablespoons butter, melted
  • 2 Tablespoons lemon juice
  • 1/2 cup Parmesan cheese
  • Salt and pepper to taste

Recipe Directions

Preheat the oven to 375 degrees. Cut the chicken breasts in half to make tenders. For the best results, cover the chicken with plastic wrap and pound them to similar thickness so they will bake evenly. Mix together the melted butter and lemon juice. Pour a little more than half of this mixture in the bottom of a 9×13 baking dish, coating the bottom. Spread the mushrooms in an even layer in the dish.

In a shallow bowl, beat the egg and add 2 teaspoons garlic powder as well as salt and pepper to taste. I added about 1 teaspoon salt and 1/4 teaspoon black pepper.

In a separate shallow dish, mix bread crumbs with the remaining 2 teaspoons garlic powder and the Parmesan cheese.

Dip each chicken tender into the egg mixture, then into the bread crumb mixture, coating each tender. Then place the tenders over top of the mushrooms.

Drizzle the remaining butter mixture over the chicken. Bake uncovered for 45 minutes.
