The last “quiche” I posted on here was my Spinach, Feta, and Egg Bake, which was just simply too spinach-y.  I still wanted to satisfy my quiche craving, so I said to heck with all the recipes and pretty much just threw a bunch of stuff into a baked pie crust to see what would happen.  What did happen, you ask?  MAGIC!  Delicious magic.

I used to be intimidated by salmon. Or at least cooking salmon myself. I’m not sure why. Perhaps it was just fish in general that I was afraid of. We didn’t eat much fish in our house growing up.

I love spaghetti. I love spaghetti sauce. It’s practically my favorite food group. Several years ago, I spent nearly a month in Italy eating spaghetti just about every evening, and oh man, do those Italians make-a some good-a sauce-a! My family and I have a few sauces that we like, but Sunday I decided to give Pioneer Woman’s recipe a try. I made a few changes to this sauce, and while the recipe feeds about 18 people, I fed 9 with it and froze the rest.

Apparently I’ve been in a broccoli mood lately. Broccoli Chicken Divan, Chicken and Broccoli Alfredo, and today’s recipe for Broccoli Cheese Soup were all recent dishes served in the Herb household. Sister Spice refuses to eat broccoli, but Herb and I are quite fond of this green veggie.

I love The Pioneer Woman, and I’ve experimented with several of her recipes over the years. This recipe for creamy Italian chicken noodle soup, however, is one of my absolute favorites. For this soup, I use my 5 quart enamel-coated cast iron dutch oven, but any large pot’ll do. I’ve made a few changes in this recipe, and it is just simply a big bowl of yum!

 Okay, I’m going to be honest with you. When I first read this recipe title a year ago, I had never heard of “divan”. Also, I wasn’t sure how to pronounce it. What I thought was, “Isn’t a ‘divan’ like a sofa or something?”

If you, like me, indulged in far too many Thanksgiving goodies and heavy dishes last week, then perhaps you are looking to lighten up your dinners for a bit. This is basically a crustless quiche without a crust or heavy cream. It’s extremely nutritious and healthy, though I will admit it was FAR too “spinachy” for me, and I am a spinach fiend! So, I will post the recipe as I made it, but I would recommend cutting the spinach in half if you so desire.
