Hi, my name is Sister Spice, and I am a picky eater. If you’re not new to this blog, then you probably already know that. I say this because when I eat at Mexican restaurants, I often feel like fajitas are my only option because I can decide for myself what to put (or, more importantly, not put) in my tortilla. That’s one reason I love places like Qdoba, Chipotle, Moe’s, etc., because I can make my own burrito, quesadilla, or whatever else. SOOOOO…Mister Spice and I decided to make our own steak fajitas.

Last week, Mr. Herb shared one of his successful recipes – Pork Chops with Mushroom Gravy. It was wonderful to let him cook for a change, and he did a great job! The chops were delicious! Apparently, this put me in the mood for more pork chops, because I bought up a huge pack at the grocery store last week and decided to fix some more (and freeze the rest). This Parmesan pork chop recipe is honestly the only way I’ve ever known to fix pork chops!

My dad taught me to make these when I was in high school. Just like a lot of our favorite dishes, these pork chops are super quick and easy to make, and delicious to boot!

I’ve made several versions of this simple chicken dish, but this recipe came from my awesome sister-in-law, Jennifer.  With just a handful of ingredients and a fairly short cooking time, this recipe is so simple to make on a busy weeknight.  Serve it up with some green beans or steamed broccoli and a sweet potato and you have a hearty, nutritious meal!  This recipe makes 8 roll-ups, which was more than enough for my husband and me, but you could certainly double the recipe and make 16.

Who loves game night?! We do!! Recently we had dinner and game night at Herb’s cousin’s house with some friends. She made some awesome chicken noodle soup, and I made broccoli cheese soup.

We had an awesome time and LOTS of laughs playing Cranium and Apples to Apples with everyone. It was great!
