In baking, the sign of success is an empty plate. These cookies were definitely a success!

Sometimes, I just get the overwhelming desire to bake something. That’s what happened on this particular Saturday night after dinner. So Herb and I just started flipping through recipe books, and decided on this recipe for chocolate crinkles. One note: this recipe does require that you chill the dough for 2 hours before baking, so make sure you have some time to kill. We spent our 2 hour wait watching a couple of Lost episodes!
By the way, I am loving Lost. Mr. Herb has seen all 6 (or 7?) seasons, but I had never seen any of it until a couple of months ago. I was hooked after episode 1! So we’ve been watching it ever since. Occasionally we’ll have a marathon and watch a few (or maybe 10!) episodes. Snow days have been great for this! Anyway, this was the perfect way to kill some time while our dough chilled. Back to the recipe!
 

Chocolate Crinkle Cookies

Recipe Ingredients

  • 4 ounces unsweetened chocolate
  • 1/2 cup shortening
  • 3 eggs, lightly beaten
  • 2 cups sugar
  • 2 teaspoons baking powder
  • 2 teaspoons vanilla
  • 1/4 teaspoon salt
  • 2 cups all-purpose flour
  • 2/3 cup powdered sugar

Combine chocolate and shortening in a small saucepan and cook over LOW heat, stirring constantly, until completely melted.

Then set aside to let it cool for 10-15 minutes.

In a large mixing bowl, whisk together eggs, sugar, baking powder, vanilla, and salt.

Then whisk in the cooled chocolate mixture.

Next, add the flour a little bit at a time, stirring until well combined.

Cover the bowl with plastic wrap and let it chill in the refrigerator for about 2 hours.

Preheat the oven to 375 degrees. Shape dough into 1-inch balls (we kept making ours bigger and bigger! But they really do turn out better if you keep them small!) Roll each dough ball in the powdered sugar and cover completely. Then place on greased cookie sheets 2 inches apart.

We give these cookies 4.5 out of 5 herbs! They were certainly a hit in our Sunday School class the following morning – they were all gone!

  1. I LOVE chocolate crinkle cookies! They always remind me of Christmas at my grandparents when I was little :) I’m going to have to give your recipe a try since I have never actually made them myself!
