Cheesy Spinach Quiche Recipe with no heavy cream

The last “quiche” I posted on here was my Spinach, Feta, and Egg Bake, which was just simply too spinach-y.  I still wanted to satisfy my quiche craving, so I said to heck with all the recipes and pretty much just threw a bunch of stuff into a baked pie crust to see what would happen.  What did happen, you ask?  MAGIC!  Delicious magic.

Recipe Ingredients

  • One deep dish pie crust (frozen would work just fine, but for this I used a Pillsbury roll-out crust)
  • 1 cup milk (skim is just fine!)
  • 1 cup shredded mozzarella
  • 1/4 cup grated Parmesan
  • 0.5 oz frozen chopped spinach, thawed and drained
  • 4 eggs
  • 4 slices turkey bacon (or regular bacon, or Canadian bacon, or ham, or……….)
  • 1 tsp oregano
  • salt and pepper, to taste

Recipe Instructions

First, prepare your pie crust per the directions given.  You could certainly make your quiche with no crust; just follow the rest of the directions and pour into a greased deep dish pie pan.  I simply roll the pie crust out, flout the edges, and prick it all around.  Stick it in the oven at 400 for about 10 minutes, then make a sad face when it doesn’t turn out the way you want it to.

But the show must go on.

While the pie crust is baking, fry up some turkey bacon, blot off the grease, and chop it up coarsely.

Then, gently whisk together all ingredients in a medium bowl.

Pour into baked pie crust.

Bake at 350 for about 30 minutes.  The center should be cooked through and the edges should be nice and golden brown.

Before you dig in, scream at your 16-lb orange tabby who is licking the crumbs of turkey bacon off of your very sharp knife.

Then, proceed to demolish nearly the entire quiche with your husband.  It’s good stuff, I tell you.

I give this recipe 5/5 herbs!  Seriously, in one sitting, Mister Spice and I pretty much took care of the whole pie.  It was the perfect balance of egg, cheese, and spinach.  A perfect way to enjoy a lighter meal after so much heavy holiday eating.  Enjoy!
