Today we’re going to play a little game known as 20 questions! I’m sure you’re familiar with it. I thought this would be a fun way to get to know each other better! To be honest, I totally stole this idea from one of my favorite personal finance blogs, 1500 Days and their 10 Questions posts with other personal finance bloggers. I thought it would be fun to do this will fellow food bloggers! So I will start!

Saturday – Bahamas Edition

Mr. Herb and I spent this past week on our very first cruise to the Bahamas! It was a lot of fun! We got to visit Ardastra Gardens and Zoo in Nassau, chill out in a hammock on the beach, swim in the beautiful clear waters of the Caribbean, and take a bicycle tour of Freeport. Yay for vacation!

I love lasagna, and I love it fixed all different ways. These lasagna roll-ups are a meatless take on a traditional lasagna; whole wheat lasagna noodles packed with low-fat ricotta cheese and spinach…hearty, healthy, and tasty!

Recipe Ingredients

  • 8-12 lasagna noodles
  • 3-4 cups marinara or spaghetti sauce

Okay. So first of all, I totally realize that these broccoli chicken puffs are not exactly the most beautiful thing you’ve ever seen. They look a bit saggy, and you may be wondering what the heck they are or what is in them. But I promise you – they are delicious!

It’s pretty safe to say that we like our breakfast casseroles around here.  There’s my Quick and Easy Breakfast Casserole, and Tracy’s Breakfast Pizza, but I’ve been seeing so many breakfast casseroles that use all the same stuff that’s found in my typical breakfast casseroles, minus the meat with the addition of hash browns.  So, I whipped up my own take on what I am calling Breakfast Casserole II.

Today is my Dad’s 58th birthday.  This is the man who taught me how to fish, shoot a basketball, hit a baseball, and who has provided for me for all of my 27 years on Earth.  Normally, Mrs. Herb and I would probably fix him a Butterscotch Pie but we celebrated by eating at Carrabba’s instead.  Happy Birthday, Dad!

Isn’t my Valentine so handsome? Yes, I know we’re a couple of months past Valentine’s Day, but I realized that I never shared Charleston with you! Mr. Herb and I spent this past Valentine’s Day weekend (our first V-Day as a married couple!) in Charleston, South Carolina.
