Blackened Chicken with Quinoa and Avocado Cream Sauce

I love chicken, but I grow tired of eating the same ol’ chicken dishes every week.  This week, I decided to spice things up a bit, using a recipe from Stefanie at Sarcastic Cooking Blog.  I must say that it looked like a lot of work, but it was relatively simple and so delicious, Mister Spice and I savored every bite!

Once again, I felt the need to use up some of my stockpile of pecans. We loved the pecan tassies, but this time I thought I’d make something even simpler – pecan cookies! These were super quick and easy – my favorite kind of recipe!

Last week, I worked close to 12-hour days Monday-Thursday, so cooking was the last thing I wanted to do when I got home!  I needed some new Crock Pot recipes to try, and this recipe from Jessica over at How Sweet it Is blog looked so delicious, I couldn’t wait to try it! How nice to throw a bunch of stuff into the Crock Pot and walk through the door after work to a meal ready to eat!

So I found some dried cranberries (Craisins, to be exact) in the pantry the other day that I didn’t know we had. It seemed like a good time to bake something, so I threw these wonderful cranberry orange cookies together! Super easy and super tasty!
