Happy Day Before Easter!

Mrs. Herb here. We celebrated my birthday allllll week long! For my family celebration, I requested my favorite meal be made, and It. Was. Delicious. The picture above is of my plate! YUM!

On Wednesday (March 27th) Mrs. Herb turned 24. She usually requests that I make her an Oreo cheesecake for her birthday, but she stumbled across this recipe that sounded too yummy to pass up. It came from the blog of Sandeea Cocina and was written in Spanish, but had an English translation. She titled the recipe “No Bake Oreo Tart” but I made some adjustments and, after much contemplation, decided to call it Chocolate Cream Oreo Delight.

Oh, cinnamon rolls. You get me every time. It’s hard for me to walk past a Cinnabon somewhere and cave in to the gooey sweetness of a cinnamon roll!

I love barbeque.  Do you love barbeque?  I’ve never met a pulled pork bbq sammy I didn’t like.  In my freezer, I had a 2.5 lb pork shoulder to use up, so I thawed it out and decided to throw it in my Crock Pot before I left for work.

I hope everyone is having a wonderful Palm Sunday. It’s very frigid here in Northeast Tennessee with promises of snow this week, so it’s hard to believe that next Sunday is Easter. As you plan your Easter menus, don’t forget about Sweet Potato Casserole, Crock Pot Mac N’ Cheese, and Chocolate Caramel Pecan Pie!  Our family goes all out for Easter as we celebrate Christ’s ultimate sacrifice to pay our debt.  Have a wonderful Palm Sunday as we prepare for Holy Week!

BUTTERFINGER!!!!! “Nobody better lay a finger on my Butterfinger!” I am a Butterfinger fiend.  I’ve always loved a good Butterfinger Blizzard from Dairy Queen.  These Butterfinger Blondies with Butterfinger Cream Frosting will satisfy anybody’s craving for this delicious candybar!  I used the recipe from Six Sisters’ Stuff Blog, with the only exception being that I didn’t use quite enough Butterfinger (I might have eaten a few of the mini candybars in the days before I fixed these blondies…woops!)

This past weekend, Mr. Herb took me to Asheville, North Carolina for a weekend getaway in celebration of my birthday! It was wonderful. The weather was beautiful and sunny, and it was the first time we were able to dine outside in months!

I am nearly thirty-years-old, and I had never truly even heard of such thing as “spaghetti squash” until the last year or so. I’ve never really liked other kinds of squash (summer squash, butternut, etc)., but after several friends insisted that spaghetti squash “noodles” were just as good as regular spaghetti noodles, I decided to give it a try. I was a little overwhelmed by all the different ways to fix spaghetti squash, but I decided to whip up a marinara sauce, make some turkey meatballs, and see how it all turned out.

So I realize that it’s spring and that pecan-type recipes are sometimes saved for the fall months (chocolate caramel pecan pie after your turkey, anyone?) But I noticed the other day that I had 2 huge bags of pecans just begging to be made into a delicious dessert! I obliged.
