Pot roast: one of my ultimate comfort foods.  I believe there are probably a million pot roast recipes out there, and for this particular recipe, I combined some of my favorites to create a tender, flavorful roast.  I like to cook roasts in my slow cooker, but on this particular night, I was cooking for my family and didn’t have the 7-8 hours that I prefer to have when cooking a roast, so I used my dutch oven instead.

Every year in early October, I take a trip to Banner Elk, North Carolina with my mom and Nana. Usually the weather is gorgeous and the fall colors are on full display. We like browse to around some antique stores and eat lunch, but mainly we go to pick out some fun fall pumpkins and gourds at the pumpkin patches around town. This year, Sister Spice was able to make the trip with us. Unfortunately, the weather was a bit on the dreary side, but we didn’t let it dampen our spirits too much!

We officially launched HerbOnHerbs a month ago yesterday. It’s been an interesting month! Sister Spice and I have had a lot of fun learning this whole “blogging” thing, cooking up yummy dishes and sharing them with the world!

Zesty Quinoa and Black Bean Salad

On Tuesday, I posted the recipe for blackened catfish.  For the first time that same night, I experimented with quinoa and made a zesty quinoa and black bean salad.  I discovered that quinoa is delightful!  It doesn’t require the cooking time that rice does, and it is packed with protein!
